Saute a bag (or 1/2 bag) of frozen spinach with a stick of butter
Add Garlic, Chili flakes, coriander-cumin or Indian pre-mixed seasoning, and some cream.
Let simmer
Drain tofu and cut into sticks.
Bake or brown on the stove just to remove some of the moisture. Should stay soft for this recipe.
Toss together and serve with Naan or Parathas.

Tofu Satay
Drain and pat dry tofu
Slice tofu into sticks
May dust with curry power here
Pam (well) a pan and oven bake the sticks until dry looking around the edges
Note: Will take 30-45 mins to dry out. Not the quickest recipe.
Can continue to bake until quite dry or pan fry to make crisp
Make Peanut dipping sauce using crunchy peanut butter, some vinegar, Siracha and a little bit of soy
