Chipotle Honey Enchiladas
Chop and brown some chicken, fake chicken or shrimp in a pan
(Shrimp for just a short moment, will cook in the oven)
Lightly coat tortillas with some oil or pam
Roll up tortillas with protein inside and some cheese, queso fresco works well. Might want to nuke the tortillas to make them soft for rolling.
Pin them with toothpicks. Soak toothpicks in some water first so they won't burn.
For sauce: Find about 2 small cans of tomato sauce. De-seed chipotles from a can (use caution they can be really hot) and add a few peppers and some adobo from the can to the tomato. Cook in a pan with some pepper, salt, and a few tablespoons of honey.
Pour sauce over enchiladas, top with some additional queso and bake until browned.
Serve with sour cream and some beans
