Squash Italian Bake

Use a peeler to peel green and yellow squash into strips.

Rinse and saute with some olive oil and season with oregano, basil, thyme, pepper and salt

Make pasta sauce (blend in sun-dried tomatoes)

Toss together.

Add Italian Sausage if desired.

Also may top with cheese and bake.

Truffle Pasta

Boil and cook any pasta

Toss with a pad of butter, salt, pepper, basil and a teaspoon of truffle oil.

Top with a generous portion of sliced or shredded parmesan cheese. Mozzarella or ricotta will probably work OK too.

Adding spinach or a fried egg on top both are great.

That's it.

Stuffed Italian Portabells

Yummy stuffed portabells

Scrape out portabella mushroom caps

Brown some veggie ground beef w/ onions and italian seasonings

Make pasta sauce (add cream and/or blend in sundried tomatoes)

Mix sauce and beef and fill caps to the brim

Top with plenty of mozzarella and parmesan

Bake until mushroom is cooked and cheese has browned
