Slice up tortillas long-ways into strips
cover bottom of Pyrex with Pam or little oil
places slices in pan
Saute chopped chicken or fake chicken with little oil
(optional and awesome: add some soy or regs chorizo)
Add some ranchera salsa or chipotles to chicken mix
layer over the tortillas on the Pyrex
Add some cheese
Add more slices of tortilla
(optional: some spicy sour cream here)
Black or regular refried beans layer here- cold is OK
More tortillas
More cheese
Bake that for about 20 at 400 degrees until a little crispy on top

Beef Chunks w/ Cheddar Quinoa "Grits"
Chop onion, garlic and some peppers
Brown quinoa for a minute in olive oil, add the above
Pour in chicken stock (as needed for amount of quinoa- 1:2 ratio)
Let simmer
Brown beef chunks with onion and adobo sauce and tablespoon of honey
(can add some de-seeded chipotles)
If real meat: Add beef stock and let simmer for 2+ hours until falls apart
If Fake: let simmer until done
When quinoa is done add shredded sharp cheddar - like TJs English Coastal
Serve beef over bed of quinoa "grits"

Can or two of garbanzo beans (soak ahead if dry) can also add spinach or peppers if you like

Add 1/2 cup of cream, remove from heat
Serve with quinoa, rice or naan

Squash Italian Bake
Use a peeler to peel green and yellow squash into strips.
Rinse and saute with some olive oil and season with oregano, basil, thyme, pepper and salt
Make pasta sauce (blend in sun-dried tomatoes)
Toss together.
Add Italian Sausage if desired.
Also may top with cheese and bake.

Killer breakfast wraps include:
Tofu, spinach and egg w/ goat cheese or feta (watch the liquid on this- can get too wet for micro so dry everything.)
Black Beans, Chipotle sauce, Egg and Cheese
Sundried tomato, Egg whites and brie
Make a bunch ahead and freeze for easy microwave breakfast.

Curry Tuna Sandwiches
Add curry powder, pepper, mayo and raisins to canned tuna.
May also add apples along with or instead of raisins.
Make sandwich or wrap.

Use turkey or fake turkey
Spread some brown mustard on one side and honey on the other for the bread
Add sliced apples, turkey, and cheese (brie works great so so does aged cheddar or gouda)
