Chana Masala

Chop onion, garlic

Blend fresh or canned tomatoes

Olive oil up a pan

Add onion, garlic, tomato mix, masala indian spices, parsley

Can or two of garbanzo beans (soak ahead if dry) can also add spinach or peppers if you like

Simmer for about 20 minutes

Add 1/2 cup of cream, remove from heat

Serve with quinoa, rice or naan
