Veggie Meatloaf

You need TJ's Meatless Meatballs for this one. Nothing else works as well.

Let frozen meatballs sit out so they start to thaw

Brown the meatballs and saute with some chopped onion

Once they are mostly unfrozen and browned, add with onions to food processor

Pulse until you get mostly smaller grains with some larger chunks

Toss in mixing bowl and add peas, eggs (until sticky mixture), smoked paprika

Bake in loaf pan until browned and cooked through- about 30 minutes.

Top with a reduction of ketchup, some basalmic (aged preferred) and a teaspoon of honey

Make a quick white sauce with chopped onions

add a 1/2 stick or more butter to a pan, and onions. Saute.
slowly add flour stirring and toasting the flour
once it's all in and a sticky goo, slowly add the cream and keep stirring

Once you have a good creamy sauce going add the chicken stock

May use cream of mushroom soup concentrate to avoid the above steps.

Let that sit for awhile and reduce a bit

Brown some chicken or fake chicken in another pan

Make Carb Quick pot pie topping (need hot water, cream, cold butter)

Toss in chicken, peas, carrots (frozen ok for veggies)

Add filling to pyrex, top with Carb Quick pie mix

Bake for 30 mins

Clam & Shrimp Pot Pie

Quicky-style Clam & Shrimp Pot Pie Recipe

Fill pyrex 1/2 - 3/4 of the way with clam chowder
Add peas and any other veggies
(I added some cream but next time, don't it was a bit thin)
Season to taste with Silverlake old bay, pepper, salt, oregano
Pop store-bought crescent rolls (can use Carb Quik)
Unroll and lay flat to create pie topping
May top with a few dots of Clearmans Spread

Bake at 375 for about 20 minutes.
